Mixed Berry Chia Pudding Parfait

RECIPE


INGREDIENTS FOR CHIA PUDDING
1 cup Almond milk or coconut milk
4 Tbsp chia seeds
1 Tbsp honey or agave syrup
1 tsp Vanilla extract
1/8 tsp salt

INGREDIENTS FOR BERRY SMOOTHIE
1/2 cup fresh strawberries
1/2 cup fresh blueberries
1/4 cup frozen açai berries
1 scoop tropical strawberry shakeology
1 banana
1/2 tsp honey (optional)
1/2 Tbsp fresh ginger
1 Tbsp coconut butter, almond butter (optional)
1 Tbsp fresh shredded coconut or dry shredded coconut (optional)
1/4 cup almond milk

INGREDIENTS FOR FRUIT LAYER
1/4 cup Fresh strawberries
1/4 cup Fresh blueberries
1/4 cup Fresh blackberries (In medium-size bowl mash berries with a fork. The berries should be chunky with lots of juice.)

PREPARATION
  1. Add your Chia seeds, vanilla extract, honey, salt and warm almond milk into a medium-size bowl. Mix to combine all ingredients and set aside for 10 to 15 minutes, until chia seeds absorb all the liquid and has the texture of pudding. Then, place chia seed pudding in refrigerator for 20 minutes to chill.

  2. Add all smoothie layer ingredients into a blender and process until smooth and creamy.

  3. To assemble your mason jar: add some of the smashed fruit on the bottom. Then, add a layer of chia putting in the middle. Top with mixed berry smoothie.

  4. Garnish parfait if desired with fresh berries, nuts, seeds, bee pollen and or coconut flakes and ENJOY
